What was the Bistro going for?
the bistro steak was $6.89 i think. i know center of the plate cost on an 8oz portion was under $3.50. it's a nice piece of meat as long as you slice it in the kitchen, like a flatiron, but it's easier to cook the bistro to temp. Where a flatiron is, well, flat and thin in alot of cases.
We actually sold out of the bistro steak friday night, 19 portions. Not bad at all considering we have a filet and rib-eye on the menu.
